Ice Harvesting at @LureATL

The temperatures may be rising outside, but ice abounds at Lure!

In each of our perfectly created punch bowls is a single ice cube.  “Cube” may be an understatement.  The precisely chiseled, clear chunk of frozen water was meticulously created using a unique method.  Beverage Director Vajra Stratigos says, “Controlling the rate in which the ice freezes is the key to clarity”. 

The ice is frozen in containers that are insulated on all sides except the top. As it freezes from the top down, it pushes the air and impurities down into the unfrozen water. Before it a freezes, the ice is harvested from the clear slab from the top.

Punch bowls come in 2 sizes, and they serve up to 8 people. These are the ones currently on the menu at Lure:

Your Money, My Looks aperol, jim beam bourbon, prosecco, honey syrup, grapefruit, rosemary

It’s Not Unusual bacardi solera rum, quinta do portal, lemon juice, allspice

Pre-Siesta almond horchata, honey syrup, el jimador blanco tequila, benedictine, kronan, allspice

We’re big fans, but don’t just trust our judgement.  These folks raved about us, too!
