Parusso Wine Dinner at Ecco

Meet master winemaker, Marco Parusso, aka “The King of Barolo” at Ecco‘s next wine dinner on Tuesday, September 4 at 6pm.

He makes supreme wines from perhaps Italy’s best wine region and from one of our favourite grapes: Nebbiolo. His style of winemaking is fruit forward and powerful but with plenty of grace and bucket loads of character and typicity. Meticulously produced, all the wines have a certain shine and polish and drink superbly.

Executive Chef Craig Richards has designed a 4-course menu of perfectly paired dishes to showcase the rich, complex flavors of each blend.

First Course
Redfish crudo with veal tartare
Tonnato sauce
Cimino Farms pears, basil, pink peppercorns
Paired with Parusso Bianco & Parusso Rose

Second Course
Tajarin with duck ragu
Agnolotti of pigeon in meat broth with cocoa
Paired with Parusso Dolcetto & Parusso Nebbiolo

Third Course
Brasato al Barolo
Polenta al forno with robiola
Baby turnips roasted with chanterelles, thyme, star anise, vin cotto
Paired with Parusso, “Le Coste Mosconi,” Barolo ‘04/’07/’08 Vertical

Fourth Course
Bonet with amaretto cookies grated on top
